Strawberry Mochi Waffles!
Strawberry Moffles for short.

Super easy and quickly makes enough for everyone.
These are YUM!
- 1 cup unsalted butter
- 2 cups sugar
- 1 (12-oz) can evaporated milk (not sweetened condensed)
- 4 eggs
- 14 1/2 oz rice flour
- ¼ cup corn starch
- 2 tsp baking powder
- 1 cup fresh strawberries cut into small cubes
Cream the butter with sugar.
Mix the evaporated milk into the butter/sugar mixture. Add eggs and beat until combined.
Mix in the rice flour, corn starch, and baking powder.
Fold in the chopped strawberries.
Refrigerate while the waffle iron heats.
Heat up waffle iron.
Put batter into center of waffle iron.
Cook for approximately 2-4 minutes. (I prefer 4 minutes.) These moffles crisp up slightly as they cool.
Serve with whipped cream and a sprinkle of strawberries. These are already sweet and buttery, they don’t really need syrup. But go ahead if you like.
