Waste Not, Want Not
This seems like a good motto for the next few weeks.
Below are a few of my favorite recipes that most days I can make with pantry staples and leftover items in my refrigerator.
Simple soups and stews are the best way to stretch a few pounds of meat into multiple meals. Increasing vegetables in a recipe is the other best option. Or, limited on vegetables, I’ve got you covered with a few quick and easy dinner options.
Cola Braised Pork Stew
Quick and Easy Grilled Chicken and Red Onion with Honey and Vinegar
Vietnamese-Style Beef with Garlic, Black Pepper, and Lime
Keo’s Thai Cashew Chicken
Aztec Soup (Quick Chicken Tortilla Soup)
Pork or Lamb Vindaloo Authentic Goan style (Low carb)
Grilled Lemon Parsley Chicken
Chipotle Glazed Chicken with Guacamole Sauce
Still a wonderful recipe without guacamole.
Chicken and Chorizo Chowder
Substitute other sausages and add frozen corn. yum!
Gluten-free Peanut Butter Cookies
No hassle dessert with just a handful of pantry staples.
Last, but not least, check on your neighbors. We may be “social distancing” or working limited hours, but we can still care about others and meet needs in times of distress.
