THIS Baked Tilapia Curry is excellent!
Low carb, gluten-free, dairy-free.
Green Eggs and Ham good.
Ya know, I could eat it many times a week.
Bonus, it’s ready in under 30 minutes.
Baked Tilapia Curry
Ingredients:
- 2 oz. Red or Yellow bell pepper, sliced
- 1 1/2 oz. shallot, finely chopped
- 1 t. yellow curry powder
- 1/4 t. Garam Masala
- 1/4 t. onion powder
- ¼ teaspoon salt
- 1/2 Cup Silk Almond Coconut milk
- 4 oz. tilapia fillet
- 1-2 T. chopped fresh cilantro
- 1 T. lime juice, fresh squeezed
Directions:
- Preheat oven to 425°F. Lightly spray an oven safe skillet with cooking spray, wipe clean.
- Heat skillet over medium heat. Add bell peppers and shallot and cook, stirring, until the peppers and shallot are softened, 3 to 5 minutes. While the vegetables cook, combine the curry powder, garam masala, onion powder, and salt. When the shallot is soft, add spices to the pan and cook, stirring, for 1 minute. Add the almond coconut milk, and bring to a boil.
- Place tilapia in the skillet and sprinkle with salt and pepper. spread the curry sauce and vegetables over the fish.
- Bake until the fish is opaque in the middle, about 15 minutes. Serve in a bowl with all the pan sauce and vegetables, Sprinkle with cilantro and lime juice.
Have you tried salmon? I love it. Not less because fish is brain food. I eat it once a week to help out my poor little grey cells :). I’m always looking for new recipes. I love salmon! Please let me know how you like it with salmon. =D I’m on a strict low fat diet for a few more weeks and salmon has too much YUMMY fat so it’s not allowed. Salmon will be the first thing I add back to the menu when I am back to regular eating!!!

I’m doing my best to drop some pounds, as well. They have crept up on me and won’t go away. Is your diet is low carb, as well? Sugar is my most damaging demon! Not to mention rice, pasta, white bread etc etc… I’m actually afraid to weigh myself. I’m on a low carb with a little good fat diet and lots of soluble fiber – always something!

I’m using HCG drops from Nuimage Medical.
The HCG burns fat without caffeine and curbs sugar cravings. I find their 46 day regimen works best for me and I have an end in sight.
The diet is very low calorie…limited to 500 a day, but I’m finding myself at about 600 a day. It’s strict lean chicken, beef, and white fish. limited veggies and fruit that are high fiber and low sugar. Nothing else, except for low cal things like herbs and seasonings.
I haven’t found anything else that works for me. On HCG, I lose an average about 1/2 pound each day.
I can be disciplined, when my body gives me results. I have about 20 days to go. I feel energetic and clear headed, no side effects.
I tried keto and got sick of heavy foods. I fought cravings the whole time and lost only a couple of pounds.
HCG, I get hungry when its about time to eat, I miss sweets, but since I see results I have will power.
THis is my 4th round on the diet, I only have good results if I do it one time a year. I think I build up a tolerance.
This time I am also allowing three cheat days during the diet (to ward off a stall in my metabolism), of 1000 calories. Still low sugar, but since I’m burning fat I add back some cheese, avocado, and a higher fat meat. No stall so far this time. 10 pounds in 24 days, Yay!
