Grilled Pork Chops with Herbed Shallot Butter
Ingredients:
- 6 tablespoons butter, softened
- 2 cloves garlic, minced
- 1 tablespoon fresh Rosemary, minced
- 1 teaspoon fresh Thyme, minced
- 1 tablespoon fresh Chives, minced
- 1 teaspoon grated Lemon rind
- 2 tablespoons Shallot, minced
- 2 – 3 lbs Pork loin chops
Directions:
Note: (Step 1) If time allows and for best results, 30 -45 minutes before grilling… Dry pork chops, arrange on platter or cookie sheet and sprinkle generously with Kosher salt on both sides. I rest mine in the oven with only the light on, no heat.
While pork rests, prepare the Herbed Shallot Butter.
In a microwave safe bowl, soften butter and add minced ingredients, garlic – shallot. Stir together, set aside.
For the meat:
After preheating and cleaning grill, turn down to medium (350-400 degrees).
(If you were not able to do (step 1) pat pork chops and sprinkle liberally with Kosher salt and place on indirect heat areas of your grill.)
If pork chops have rested (Step 1) and grill is ready, dry any surface moisture with paper towels and place pork chops on indirect heat areas of grill.
Grill each side for 8 to 10 minutes per side. Check temperature with a meat thermometer, meat should register 140 – 150 when done. Remove and rest covered for 10 minutes before serving.
Top each Grilled Pork Chop with a spoonful of the Herbed Shallot Butter and enjoy.
