Pressed for time these are a great treat. You could be enjoying a hot Gluten-free Peanut Butter cookie in just 20 minutes.
These tend to be on the sweet side, but sometimes you just need a peanut butter cookie.
Note: I made these once with cheap store brand peanut butter and learned it was very oil based. The cookies came out crumbly and fried. Not enjoyable.
I prefer Skippy peanut butter, creamy or crunchy, the flavor and texture is just right.
Though I myself don’t need a gluten-free diet, I like having good options for friends that are and it is nice to omit flour when I can.
These were a special treat along with Gluten-Free Double Chocolate Chipotle Cookies friends baby shower, she was the guest of honor and deserved her own special treats.
Gluten-free Peanut Butter Cookies
- 1 cup Peanut Butter ( must be good quality, can be chunky if you like)
- 1 cup sugar
- 1 egg
- optional ingredients – Chocolate Chips.
Preheat oven to 350 degree.
Beat peanut butter and sugar until fully blended. Add egg beat again. (Mix in Chocolate Chips if desired.)
Place rounded tablespoons of dough on cookie sheet 2 inches apart. Dip bottom of fork in a small dish of sugar and flatten each cookie with a cross hatch or hash tag pattern. Sprinkle with salt if desired.
Bake for 10 – 12 minutes. Cool on sheets for 2 minutes before removing to cool fully on a rack.
