Keto Almond Bread
(Almond Meal Bread – Gluten free, Very low carb)

Converted from Metric:
- 3 large eggs
- 2 T. butter, softened
- 3/4 C Finely Ground Almond Meal ( I used Bob’s Red Mill Whole ground meal)
- 1 1/2 t. Baking Powder
- Dash of Salt ( my addition not in original recipe)
Combine all ingredients in mixing bowl and beat at medium / Med. High speed 1-2 minutes. It looks slightly glossy to me, I would say creamed. Pour into greased loaf pan and bake at 400 degrees for 20 minutes.
In case you are wondering texture and flavor? I would compare it to a whole wheat bread (Just 1 – 1 1/2 inches tall). Not eggy, but not overly dense. Perfect for a sandwich. Sliced horizontally it works very well.
Bonus : Net Carbs for the Whole Loaf – 9 g. Carbs if using whole almond, almond meal.
