Citrus Marinated Onions
These simple onions take plain tacos to another level.
Mexican cooking often uses limes, so these Citrus Marinated Onions really complete the meal.
4 ingredients, easy. Just give the citrus time to do its magic.
Just beginning to soften. I would let these go another 30 -60 minutes if I have time.
- 1 large red onion, thinly sliced
- 3-4 limes, juiced
- 1-2 lemons, juiced
Mix the ingredients together making sure to add enough lime and lemon to fill half way up the onions. Cover and rest in the refrigerator for 30 minutes. Stir and salt to taste. They should have begun to shrink (marinate). I prefer them when they have marinated for at least an hour, but 24 hours is fine. They gain a pink hue as they marinate and soften in the juice. Don’t forget to spoon some of the juice over your taco, or with whatever else you serve these.
